Title: Aunt Betty's Potato Pancakes

Yield: 4 Servings

3 Or 4 large red potatoes
1lb(or more) bulk pork sausage
1 Or 2 eggs

1 or 2 tsp. baking powder Salt and pepper as desired Flour (if needed for thickening)

Peel potatoes. Grate them on the fine side of a grater or shred in the fine shredder of a food processor. Thoroughly mix in pork sausage with potatoes. Add eggs and mix well. If mixture is watery and thin, add flour to

thicken. Add and mix in baking powder, salt and pepper. Fry in lightly greased skillet. Cook until brown, turning only once. Serve with applesauce. This should make enough for four, with leftovers. From: Danial Mannen Date: 03-11-96
